Mark Wiens was particularly impressed by the authenticity of the Isan and Southern Thai flavors found in Sydney, noting that some dishes were even better than those in Thailand. He was especially excited to find rare traditional ingredients like beef bile used in raw meat salads, which provided a complex bitterness he didn't expect to find in Australia.
